CURRIED  BARLEY  SOUP

1 tbs oil
1 large onion
2 cloves garlic
½ tsp turmeric
2 tsp curry powder
½ tsp ground cumin
1 tsp minced chilli
6 cups water or more if needed
1 ½ cups chicken stock
½ cup barley
1 can chopped tomatoes


For this recipe I soak the barley overnight, or cook it on its own for about 30 minutes, before proceeding with this recipe.

Heat the oil add the onion and cook till transparent, add the garlic, turmeric, curry powder, cumin and chilli, cook for 1 minute.
Add water stock, barley, tomatoes.  Simmer for 30 minutes or so.

You can add whatever you want to this soup, vegetables or lentils.
