Dano's Recipes
VEGETARIAN SUSHI
 
1 cup koshihikari rice
1 tbs seasoned rice vinegar
4 nori sheets
Ripe avocado
Lebanese cucumber
Red capsicum
Grated carrot
Soy sauce to serve


1 Cook the rice according to packet directions.  Set aside to 5 minutes to cool slightly.  Transfer the rice to a bowl.  Drizzle over the vinegar and gently fold through the rice.  Set aside for 30 minutes to cool

2. Place the nori sheets, shiny side down on a clean work surface.  Use wet hands to spread the rice over the nori sheets, leaving a 2cm wide border along the edges closest to you.  Spread the avocado along the centre.  Top with cucumber, capsicum, and carrot.  Roll up firmly to enclose the filling.  Brush edge with water to seal.

3. Cut the rolls into 6 pieces.  Serve with soy sauce.
