ORANGE & ALMOND CAKE
185gm butter
¾ cup caster sugar
4 eggs, separated
Grated rind of 1 orange
½ teaspoon almond essence
1 cup ground almonds
¾ cup self raising flour
¼ cup plain flour
½ cup fresh orange juice
Cream the butter and sugar until light and fluffy.
Add the egg yolks, orange rind and almond essence.
Lightly fold through the ground almonds and sifted flour, then stir in the orange juice.
Whip the egg whites until firm, but not stiff and dry, and fold evenly into the mixture.
Grease a 7 cup fluted cake pan ( or other suitable fancy ring pan). Spoon the cake mixture into the pan and bake in a moderate oven for 50 – 60 minutes or until cooked when tested.
Allow to stand for five minutes or until cooked when tested.
Allow to stand for five minutes then carefully turn out onto a cake rack.
