EASY ORANGE CAKE
1 cup sugar
1 ½ cups SR flour with a pinch of salt
2 eggs
½ cup milk
Rind of 1 orange finely grated
Juice of ½ orange
120gm butter (melted)
Mix all ingredients together adding melted butter last. Beat for 3 minutes. Pour into a greased tin and bake in moderate oven for approx. 40 minutes.
