BAKED  PEACHES

4 ripe peaches
45 gm amaretti biscuits
1 TBS sweet Marsala
20 gm ground almonds
1 egg yolk
1 TBS sugar
25 gm unsalted butter
Icing sugar


Preheat oven to 180.
Halve the peaches and remove the stones.
Crush the Amaretti biscuits in a food processor and mix with the Marsala, almonds, egg yolk and sugar.
Fill the peaches with the biscuit mixture, spreading the filling in an even layer over the entire surface.  Dot each peach with butter and arrange in a shallow oven proof dish or baking tray.  Bake for 20 – 30 minutes or until the peaches are tender right through.
Dust lightly with Icing sugar.
