PEAR  CAKE

2 medium pears
1 TBS lemon juice
3 eggs
1 TSP vanilla extract
2/3 cup caster sugar
1 2/3 cup plain flour
1 ½ teaspoons baking powder
125 gm melted butter
½ cup milk
 


Preheat oven to 180
22 – 24 cm springform pan

Peel, core and slice pears, thinly.  Sprinkle lemon juice over them.

Combine eggs, vanilla, caster sugar, flour and baking powder in a large bowl of an electric mixer.  Beat on low speed until smooth.  Fold in combined butter and milk.

Spread 1/3 of the cake mixture in tin, and lay down some pears.
Spread on the remaining mixture and top off with remaining sliced pears.

Check after 45 minutes.

Nice with whipped cream.
